José Barattino is an executive chef at Eataly in Brazil, he signs group St. Marché’s dishes, and is a business partner at Pastifício Due Grani. In 2003, he joined the cooking team of acclaimed El Bulli, in Spain, with chef Ferran Adriá. In 2005, he returned to Brazil to be a sous chef at Emiliano. In just a few months, he became the hotel’s master chef and, for 8 years, he scored many awards. In 2009, he started to develop a cooperative work with exponents of small-scale organic and biodynamic farming in the countryside of São Paulo.
