Seasonal contemporary cuisine

Sous chef at Maní, Vinicius Nagao was born in Salvador, lived in Florianópolis, and nearly finished his degree in Control and Automation Engineering. After a short technical course, Vinicius joined Êncanta, in Jurerê Internacional, as a kitchen hand, and Terraço Cacupé Eventos as a cook. He moved to São Paulo and, in 2012, he joined Maní as an intern. He was promoted a cook in August 2012, when he implemented an internship program at the restaurant. In Janeiro 2015, he became sous chef at Maní.
