DRINK & DISH RECIPE SERIES – KETEL ONE GREEN MARY AND KING PRAWNS

Ingredients

King prawns

  • 1 aubergine
  • 2 garlic cloves
  • 1 chilli
  • 2 gamba king prawns
  • olive oil
  • sesame oil
  • fresh ginger
  • lemongrass
  • salt

Ketel One Green Mary

  • 35ml Ketel One Vodka
  • 100ml pineapple juice
  • 1 stalk of coriander leaves
  • 1 stalk of mint leaves
  • 3-4 jalapeno slices
  • 1 pinch of rock salt
  • 10ml apple cider vinegar
  • 5ml agave syrup

King prawns

Method

  1. Heat the oven to 170 degrees
  2. Slice the aubergine in half and scatter each side with the garlic and chilli
  3. Put the aubergine on a baking plate and sprinkle with olive oil.
  4. Roast in the oven for 40 minutes
  5. Let the aubergine cool to room temperature and scoop the flesh out.
  6. Season with a pinch of salt, fresh ginger, lemongrass and sesame oil
  7. Use one prawn per person.
  8. Place on a baking tray with oil and char for 20 seconds using a small gas burner

Ketel One Green Mary

Method

  1. Add all the ingredients to a blender. Blend until smooth, then fine strain into a highball glass
  2. Garnish with a fresh jalapeno or mint leaf
