AIZOMÊ

Chef Telma Shiraishi runs the restaurant Aizomê. Her work is based on handpicking ingredients from farms, from the sea and with small producers that she is acquainted with, who also appreciate unique artisanal stuff. Based on traditional Japanese flavors and cooking techniques combined with a very personal twist and some original touches, the chef prepares a variety of concoctions following the flavor of the seasons, the weather and their inspirations.
